About the Recipe

Cobb Salad is an American phenomenon, reported to be invented in the 1930s at the famous Brown Derby restaurant in Hollywood, owned by one Robert Howard Cobb. Regardless of its provenance, this fresh, healthy salad deserves to make it onto all European menus, especially in the summer when our lettuce, tomatoes and spring onions are all their freshest. You can remember what to put in it by thinking EAT COBB: Eggs, Avocado, Tomatoes, Chicken, Onions, Bacon, Blue cheese. Choose the lettuce of your choice (Cos, Romaine, Little Gem), add these ingredients and top with homemade Ranch dressing (our recommendation) and you will be hooked.

Ingredients

  • Lettuce of your choice (Cos, Romaine, Little Gem, etc.)

  • eggs, hard bolied and cliced (1 per serving)

  • avocado, cubed (1/4 per serving)

  • tomatoes, sliced (approx. 1 per serving)

  • chicken breast, seasoned, grilled and then sliced (1 per serving)

  • onions, red or spring, chopped small (1 tbsp per serving)

  • bacon, streaky works best, grilled and chopped into small, crispy pieces (2 per serving)

  • blue cheese (or feta, your preference)

  • Classic Ranch Dressing:

  • 2 tbsp chopped parsley

  • 2 tbsp chopped chives

  • 1/3 cup buttermilk

  • 1/3 cup mayonnaise

  • 1 tsp dried dill weed

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder

Preparation

  • For the Cobb Salad:

  • Simply cut the lettuce up and place on a plate

  • Add the Cobb Salad ingredients, either tossing all in or arranging in strips, your preference!

  • For the Ranch Dressing:

  • Simply whisk all the ingredients together

  • Serve with the Cobb Salad

  • Enjoy!
