About the Recipe
This Carrot & Cashew Pate is a tasty alternative to the usual store bought hummus for a snack or an hors d'oeuvre. It is made in approx 10 minutes maximum and gives you great protein from the cashews and vitmain A from the carrots. This recipe serves as an appetiser for maximum 4 not-so-hungry people, but if you want to also have a supply to keep in your fridge for a convenient, healthy snack, we recommend doubling the recipe!
Ingredients
300g carrots, chopped into large pieces
200g cashews, soaked in water for at least 1 hour
70g tahini (available in the health food section)
60 ml lemon juice
1 Tbsp. ginger, peeled and grated
3 Tbsp. coriander, stems, and leaves
Optional sea salt and chopped spring onions for garnish.
Preparation
Blend the carrots in a food processor until there are no more big chunks.
Drain the cashews and place them in the food processor, along with the tahini, lemon juice, ginger, coriander and a pinch of salt.
Process until mixture is completely smooth, about 3 minutes.
Sprinkle some sea salt and finely chopped spring onions on top as garnish if desired.
Serve with cucumber slices, celery sticks, crackers or bread.
