About the Recipe
This is just about the easiest and tastiest dessert you can make. Ever wondered what would make meringue's sweetness more palatable? Or have you wondered what would make yogurt a little less tart? Well, they just need each other. And of course, generous helpings of fruit - either raspberries, strawberries or whatever your choice.
Ingredients
1 package of meringue mests or one pavlova meringue
2 punnets of strawberries or raspberries
450g pot of low fat vanilla yogurt
250ml whipping cream
2 tablespoons of sugar
a few mint leaves for garnish
Preparation
Prepare the strawberries by removing the green tops.
For one punnet of the strawberries, cut all the strawberries in half, leave the others as they are. If you are using raspberries, there is no need to do anything.
Add the sugar to the whipping cream and whip until peaks form.
Add half the cream to the yogurt and mix well.
Add the halved strawberries to the yogurt/cream.
Right before serving, gently break up the meringue into bite size chinks and add to the yogurt/cream mix.
To serve, pour the mix into a suitable dessert cup or a bowl, top with a good few whole strawberries or raspberries, and a generous dollop of cream. If you want, add a sprig of mint for colour.
