Ingredients

  • 4 large russet potatoes, scrubbed and dried

  • 1 cup shredded Parmesan cheese

  • 1/2 cup sour cream

  • 2 tablespoons chopped fresh chives or green onions

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • Olive oil for brushing

  • Additional chopped fresh chives for garnish (optional)

Preparation

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminium foil for easy cleanup.

  • Prepare the potatoes: Using a sharp knife, carefully slice each potato in half lengthwise. Scoop out the flesh from each potato half, leaving about a 1/4-inch-thick shell. Place the scooped-out potato flesh in a mixing bowl and set the potato shells aside.

  • Prepare the filling: To the bowl with the potato flesh, add shredded Parmesan cheese, sour cream, chopped chives or green onions, minced garlic, dried thyme, salt, and pepper. Mix until all ingredients are well combined, and the filling is creamy and smooth.

  • Stuff the potatoes: Spoon the filling mixture evenly into each potato shell, mounding it slightly on top.

  • Brush with olive oil: Place the stuffed potatoes on the prepared baking sheet. Brush the tops of the stuffed potatoes with olive oil, which helps them crisp up and develop a golden brown color during baking.

  • Bake the stuffed potatoes: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the potatoes are tender and the filling is heated through. The tops should be golden and slightly crispy.
