About the Recipe

Potato cakes are a delicious and versatile dish that can be enjoyed as a side, appetizer, or even a light meal. Made with mashed potatoes and a few simple ingredients, these crispy cakes are sure to become a favorite in your kitchen. Follow this easy recipe to make homemade Potato Cakes that are crispy on the outside and creamy on the inside.

Ingredients

  • 2 cups mashed potatoes (about 2 medium potatoes)

  • 1/4 cup breadcrumbs

  • 1 egg, beaten

  • 2 tablespoons chopped fresh parsley or chives

  • 2 cloves garlic, minced (optional)

  • Salt and pepper to taste

  • 2 tablespoons olive oil or butter, for frying

Preparation

  • Prepare the mashed potatoes: Peel and dice the potatoes, then boil them in salted water until tender. Drain the potatoes and mash them until smooth. Let them cool slightly before using.

  • Mix the ingredients: In a large mixing bowl, combine the mashed potatoes, breadcrumbs, beaten egg, chopped fresh parsley or chives, minced garlic (if using), salt, and pepper. Mix until all ingredients are well combined.

  • Form the potato cakes: Divide the potato mixture into equal portions and shape each portion into a small patty, forming them into cakes about 1/2 inch thick.

  • Cook the potato cakes: In a large skillet, heat the olive oil or melt the butter over medium heat. Add the potato cakes to the skillet and cook until golden brown and crispy on both sides, about 3-4 minutes per side.

  • Serve: Once cooked, remove the potato cakes from the skillet and drain them on a paper towel-lined plate to remove any excess oil. Serve the Potato Cakes warm as a side dish, appetizer, or light meal.
